INGREDIENTS

2 cups Dried Chickpeas (you can use canned)
1 tsp Baking Soda
2 Cloves of Garlic (1 small if using canned chickpeas)
Juice of 1 Lemon
1 1/2 tsp Kosher Salt
1/2 cup Tahini
Ice Cold Water
Smoked Paprika or Za’atar (toping)


How to cook Chickpeas

It’s important that you don’t skip this first step.
Soak chickpeas in water for at least 12 hours and up to 24. Drain and rinse.
Place the chickpeas, garlic cloves and baking soda in an instant pot.
Cover with water, stir and cook on high pressure for 10-12 minutes.
Let the pressure naturally release for 10 minutes before breaking the seal.

How to make hummus

Start by peeling the chickpeas. Drain, rinse and set aside.
In a bowl, mix the salt and lemon juice together until the salt dissolved.
In a food processor, add the cooked beans, the garlic, salty lemon juice, and process until smooth.
Add tahini and ice cold water, and process for a couple of minutes.
To serve, place in a bowl and top with paprika or za’atar, olive oil, anything you like.

how to store

If you have leftover, keep in the fridge in sealed container for up to 5 days.
