This might not be the most appetizing dish, but it's for sure one of my favorite dishes. Spicy, thick, creamy, saucy, healthy and easy. I love to have a big plate of these lentils after a big workout, as it's extra rich in protein it'll for sure help you grow your booty! But that's not it, it's so delicious and I'd enjoy this recipe after a lazy day anyway.

Spicy curried lentils

5-6 serves


Preparation time 5 minutes - Cooking time 50 minutes


INGREDIENTS

Spices

1 small tsp ginger powder

2 tsp curry powder

1 tsp cumin

1½ tsp turmeric

½ tsp chili powder

Vegetables

2 tomatoes

1 red onion

2 garlic cloves

Other

1 ½ tbsp wholegrain mustard

1 tbsp coconut oil

1 small tsp salt

300g dried green lentils

900ml vegetable broth


PREPARATION

Cut onion into strips, and crush garlic

In a pot, melt the coconut oil over high heat

Add the onion, garlic and wholegrain mustard, mix and cook until the onion is translucent

Add the curry, ginger, cumin, turmeric and chili powder, mix until combined and cook over medium heat for 3 more minutes

Add lentils and stir to coat with the spices and saute for 3 minutes

Add vegetable broth and cook for a couple minutes while chopping the tomatoes

Add tomatoes and salt and bring to boil for 1 minute

Simmer over medium heat for 40 minutes with the lid on, stirring occasionally. The lentils should be tender but not dissolved into mush

Serve with rice or steamed greens.
