INGREDIENTS

250g all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
2 tsp ground cinnamon
1/4 tsp ground nutmeg

Pinch of salt
Wet Ingredients:
100g unsalted butter (softened)
80g brown sugar
100g honey (choose a floral honey like acacia or chestnut for added richness)
1 large egg
1 tsp vanilla extract
Zest of 1 orange
INSTRUCTIONS
Prepare the Dough
In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Set aside.
In a separate large bowl, cream the softened butter and brown sugar until light and fluffy. Add the honey, egg, vanilla extract, and orange zest. Mix until fully incorporated.
Combine
Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix—the dough should be soft and slightly sticky.
Wrap the dough in plastic wrap and chill for 1-2 hours to firm up slightly.
Shape the Cookies
Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
Roll the chilled dough into small balls (about 1 tablespoon each) and flatten them down a little, or use cookie cutters for festive shapes. Place them on the tray, leaving space for slight spreading.
Bake
Bake for 8-10 minutes, just until the edges are set and the cookies are a little puffed. They should remain soft in the center—avoid overbaking.
Let the cookies cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely.
