1. Maple Pecan Hasselback Butternut Squash

Dairy-free, gluten-free, soy-free, vegan, paleo

Butternut squash halves, cut hasselback style, roasted with maple syrup and butter glaze, flavoured with thyme and topped with chopped pecans. Thank me later.

This is so not me, but some people think that salad goes with summer. It's not very true. I get that depending where you live, you might not be able to find tasty tomatoes, avocados, and some other summer fruits and vegetables. But there are many other ingredients that you can make healthy and tasty salads with. Yes, even during the winter. And this is one of the best, and I am sure that you'll find every single ingredients at your local grocery store and/or farmer's market.

This is a classic, completely timeless. But I recently tried out this recipe, and there's no better chocolate chip cake (vegan or not) better than this one. Dip in your chai latte or hot chocolate for extra flavors!

Richa, from VeganRicha.com, my personal favorite food blogger - really, you can try any of her recipe, you'll never be disappointed - says that this recipe is super easy, quick, and popular to everyone, and proposes you to add seasonal berries, make cupcakes, add a streusel for variation. I personnally love that old-fashion version. Chocolate!

 



4. Autumn Roasted Veggies with Apples and Pecans

Seriously, what could be more autumnal than this dish? 
Butternut squash, brussels sprouts, apples, dried cranberries, cinnamon, pecans and nutmeg... 
This is definitely my essential recipe this fall.
