Yellow Coconut Smoothie

An addictive healthy vegan, creamy and tropical yellow smoothie, ready in a flash, with an instantaneous cooling feeling, perfect for hot days, made entirely of tropical plants. The delightful flavor of coconut, mixed with creamy bananas, sweet pineapple, delicate peaches, and vibrant passion fruits; resulting in a perfect tingly island milk that’ll easily let you picture yourself under the hot Caribbean sun, facing the warm turquoise sea.

INGREDIENTS

Fruits
2 Frozen Bananas¹
1 cup Pineapple, chopped
2 Peaches
2 Passion Fruits
½ Lime, juiced

Liquids & Spice
½ cup Coconut Milk, unsweetened
½ cup Coconut Water
1 tsp Vanilla Powder
½ tsp Vanilla Extract

¹Using frozen banana will give a creamier texture as well as a colder kick that you enjoy in a smoothie. But you can also use non frozen banana(s) and add ½ cup of crushed ice or even ice cubes.


INSTRUCTIONS
Peel and roughly chop the bananas, pineapple, and peaches, then scoop the passion fruits, and juice the lime.
In a blender, add all the ingredients together (fruits, liquid and spice), and blend until smooth.
Strain the smoothie before serving, so the passion fruits’ seeds are extracted.
Enjoy!

You can store the smoothie for up to 48 hours: simply pour it into a jar, and refrigerate. Separation may occur, it’s completely normal, just give it a nice shake before serving.
